Quick Pancake

2 eggs, separated
1 c. yogurt
1 c. quick cooking oats
1 Tbsp sugar
¼ tsp. baking soda
¼ tsp. baking powder
¼ tsp. salt
1 Tbsp butter
Fresh fruit, chopped
Sauté fruit in butter and brown sugar and place in bottom
of pan.
Beat egg yolks and stir in yogurt. Add dry ingredients and
mix together.
Beat egg whites until stiff, fold into batter.
Melt butter in large frying pan that can be put into the oven. Pour mixture into
pan, bake 20 minutes at 350F. Serve with syrup.
